Driverless printing seems to lack pro/prosumer features

Is it just me, or does driverless (IPP) printing seem to be falling into least-common-featureset syndrome?

Even from the latest MacBook, latest macOS, where all of this is supposed to "just work," trying to do anything more than print a basic document seems impossible. If you want to print on photo or matte paper -- the latter seems to require a bit of ink-mixing voodoo to make the colors look correct -- the options just aren't there, at least for the Canon printers I have.

Scanning (from the multifunction devices I have) is a mess. Faxing functionality is non-existent, but thankfully I never have to use that any longer.

If Apple -- who until recently employed the main author of CUPS -- can't get this right, I don't see much luck for the rest of the CUPS ecosystem.
