It might be possible to have Skype run under an X server that doesn't have your other Wayland clients, but does have a window with what you're sharing via PipeWire.

Alternatively, it would be an amusing hack to tell Skype that you've got an extra camera that's actually PipeWire. That would probably be a surprising UI, but I'm not sure it wouldn't be nicer than screen sharing normally is.
