Even if true, that seems trivial to change or disable, given the full-source-code nature of gitlab...

Trivial? You'd have to do a full scan of the code for every update. Sure it wasn't malicious, probably, just someone being stupid like all of us developers are sometimes, but for our volunteer sysadmins it was a dealbreaker. For more details, you'd have to ask them... I'm just a developer.
