And a path from a 32-bit install (which pre-dates Flash's 64-bit support) to a 64-bit kernel or better, a full 64-bit userspace?

Or can I just replace the kernel with some dpkg -i <shiny 64-bit kernel>.deb and off I go?

Pretty much. Note how that package is available for i386 as well as amd64.
