The lack of ssh in the default install is one of the errata items of rc1 of the installer. We're in the process of fixing this, final sarge installs will indeed get ssh installed by default.

As to smp (or optimised) kernel installation, the installer is happy to install one if it's available, but we've not managed to shoehorn even a set of optimised kernels onto the full CD, and the netinst CD you probably installed from has room for only one kernel. If this is a big problem, the businesscard CD downloads the kernel package from the network as part of the installation, and will install an appropriatly optimised or smp kernel.
