Other than Emacs, what apps actually support this? For me, every time the SSH connection does, anything that used X over it dies.

I've used a couple, or seen others use them. Mostly big simulation apps with lots and lots of state. These days, one would probably write a server and a frontend with less state... but that happened not to be how those were written.
