Not only is "u-boot a bit more complicated than Chrome OS really requires", but it also is such a pain to work with because of the arcane review process u-boot community still relies on.
This and lack of the community's flexibility indeed could drive projects away from using u-boot and into exploring other bootloader options.

Can you spell that out more? Last time I checked, from the perspective of an uninformed outsider like me, u-boot was not so different to work with from projects like the Linux kernel.
