It would be great if you could plug in a FireWire Microphone (do they exist?) and get a gui for controlling levels and recording. Then the iPod could replace professional devices for doing radio interviews, recording concerts, etc...

There is Apple's iSight, a firewire camera and microphone. The iPod's processor could probably handle the audio, but I wonder if it could handle recording video?

The 3rd gen ipod will take a microphone in the headphone jack, and you can in fact record a few seconds of sound that way. No need to mess with firewire. I expect Apple will eventually release dictation features for the ipod, since it's just a matter of software.

Actually, griffin will soon be releasing iTalk (http://www.griffintechnology.com/products/italk/) for the 3rd gen iPods that will.... well, check out the site
