Can't we get our own set of keys? This would ensure that we don't have to rely on Microsoft being good guys in the future.

Just how much do UEFI signing keys cost?

Nothing. Then you just have to get every manufacturer to include them. If you want to run a signing service then you'd also need to handle identity verification, key security and revocation. That's likely to cost rather a lot
