Quick, maybe. Without breaking applications? Not so sure. The lock screen would likely be considered "sensitive", so after locking the screen, the sensors would have to be turned off (assuming a PIN or pattern lock is used), probably making the application very unhappy.

or just make the sensors return zeros

which would be perfectly sensible for these types of sensors, just return the baseline, no-movement readings.
