I used to keep lots of simple text files for things like tracking purchases and todo lists, but they've all been slowly migrating over to org-mode. I've also used it as the source format for documenting one of our work projects, and we deliver the exported HTML to our customer. These days I even use org-mode tables (with spreadsheet calculations) to track hours. The author of org-mode has said that it's now his default text mode in emacs. I haven't reached that point yet but I'm getting there.
