I have a Google Talk account (through Google Apps for domains), and audio chat and even video chat works fine for me with Empathy.

Does it work with other Google Talk users using Google's stuff, or only with other empathy users?

The server has nothing to do with the audio/video support.
The clients negotiate a direct connection over the xmpp channel (with special XML messages), and then communicate directly.

If a direct connection is not possible (both behind restrictive firewall) one of the peers should use a proxy.

I used it to talk with people who use the Google Talk client on Windows.
