I think the directory listing under the text "Unmounting the /mnt directory unwinds the filesystem mount stack:" is wrong.

Agreed. Either that, or I'm totally misunderstanding something here.

Yes, the filesystem listing after unmount should be:

# umount /mnt
# ls /mnt
dir1 file1 link1
