2 GiB RAM, 1.6 GHz processor, up to 160 GB of disk, it's not for education market, is for real people that want to read mail, blogs, chat and surf when travelling (and they could do all these with definitely a less powered system).

I'll bet the 2 GB requirement is just for parity with the Windows variants of the same laptop. Memory's cheap nowadays anyway, so why not 2 GB?
