Requirements of NDAs vary. Do not presume they all have the issues you are railing against.
Perhaps you should investigate (I have not) what types of NDAs would be considered acceptable by this project, and if you believe they are overlooking a freedom issue, urge caution, or engage folks in discussion of the matter. Polemics are sometimes useful, but in this situation I think you have a real opportunity for dialogue.
