the worst that happens is that projects tear themselves apart arguing over which license to use
That's true for any free-software license—the contributors can always have philosophical disagreements that lead to forking.
It has nothing to do with any supposed legal risk of giving "inherent, unrestricted trust" to the FSF. The legal risk of making your code "v2 or later" seems very minor because of the "or"—you always have the option to use the old version.
