The idea behing stable it to only publish security fixes (or extremely important new features).

Or when an application changes a lot, it becomes very very hard to backport every fix to various stable releases.

Mozilla decides to stop supporting old releases, in part because they don't have the man power to do that. I guess they would do it if they were paid to.

When Microsoft fixes a vulnerability for a package, they have to create and test the fix for various stable versions. Sometimes this applications have been used as basis for third party, so Microsoft doesn't even fully control the applications. Hence, sometimes, the time it takes to solve the problem.
