So even if the GStreamer pipeline is entirely secure and uncrackable, a quick kernel hack will still make the capturing of unrestricted streams easy.

I think you meant to say restricted streams. Capturing unrestricted streams should be easy without having to hack the kernel. :-)

To use the proper terminology -- the correct word is cleartext.
