I've always liked the Gimp interface, albeit with a few minor reservations. The only real gripe I have with it (and it's not really the Gimp's fault) is that the desktop menu only works in Gnome. KDE has desktop menus, but it only works with Qt apps. There should be a standard for that kind of thing. The multiple window approach coupled with desktop menu a la Mac and a good window manager is a really nice interface.
