Kanotix also uses Squashfs for better compression (rather than cloop used by Knoppix). As you mentioned Unionfs I'm surprised you didn't mention Squashfs, because Unionfs is used in conjunction with Squashfs to provide the root filesystem (in much the sameway cowloop is used by cloop).
