Ubuntu is definitely supported as a server OS. If you boot the installer with 'custom', it will install the base system only, letting you get on with your server requirements. There is a big list of server software in our supported list, covering all the most popular things (like BIND, Apache, PostgreSQL, MySQL, etc).
